Hueso restaurant, which translates as Bone restaurant, is located in a modernized 1940s building in Guadalajara. The place has been designed by studio Cadena + Asociados and has a stunning interior, the walls are entirely adorned with more than 10,000 animal bones and painted in a palette of greys and whites. Chef Alfonso Cadena’s menu includes unusual meat cuts such as bone marrow.
